The Wave-Pattern Boning Slicer is a dedicated slicing tool, not a chopper, and it’s built that way on purpose. A smooth, continuous 120mm edge (no holes, no serrations) is designed purely for clean draw-cuts through meat, portioning, and trimming fat and silverskin.

Western boning knives typically run 85–285g with 120–180mm blades. At 215g, this one sits mid-range comfortably: enough presence for control on tougher cuts, light enough for extended trimming sessions without fatigue. The upswept tip is suited to detail work around joints and sinew.

An acid-etched wave/river pattern runs along the blade face, paired with a warm wood handle and an angled bolster for a natural, controlled grip during long portioning sessions.

Maintenance & Care

  • Not Dishwasher Safe: Never put your knife in the dishwasher, always hand-wash.
  • Rinse After Each Use: Wash with fresh water immediately, especially after acidic marinades or blood contact.
  • Dry Immediately: Wipe your knife dry right away. The acid-etched finish and edge are both vulnerable to moisture if left wet.
  • Oil After Each Use: Apply a light coat of food-safe oil to protect the blade finish and prevent tarnishing.
  • Store Properly: Keep in a dry place, away from humidity.

Sharpening

This is a fine slicing edge, so sharpen regularly using any standard sharpening equipment, including a wet stone, rods, etc.

Sharpening at a 12-15 degree angle, on each side.
